Make a Lemon Meringue Pie instead! It is good, visually pleasing, and just delicious! The hard work of making it, just might make your troubles seem smaller…It is worth the try! Or, if you have no troubles that you are trying to resolve, you might want to make this pie anyway. It is the best lemon meringue pie you will ever eat.
So, today I am going to share with you my favorite wonderful lemon pie recipe, given to me by my friend, Rosemary.
Make one pie shell for a 9 inch pie.
Lemon Filling: 1/4 Cup cornstarch, 3 T flour, 1 3/4 Cup sugar, 1/4 tsp salt, 2 cups water, 4 egg yolks (beaten), 1/2 Cup fresh lemon juice, 1 T grated lemon peel, 1 T butter
Meringue : 4 egg whites, 1/2 tsp cream tarter…beat the devil out! add 1/2 sugar (one T at a time) until meringue is very stiff!
Make the filling…in a medium saucepan combine cornstarch, flour, 1 3/4 Cup sugar/salt ..mix well…gradually add water, stirring until smooth. Over medium heat bring to a boil. Stirring occassionally…boil one minute until shiny. Quickly stir some of the hot mixture into the egg yolks. Pour back into hot mixture. Cook over low heat 5 min. Remove from heat. Stir in lemon juice, lemon jest, and butter. Pour into baked pie shell. Preheat oven to 400 degrees
Make meringue in medium bowl at medium speed, beat egg whites, cream of tartar… Gradually beat in 1/2 sugar. Beat at high-speed til stiff peaks form. Spread meringue on pie and bake for 7 tp 9 minutes until golden brown.
